The company focuses on serving fresh fried chicken, crispy tenders, catfish, sweet tea, and classic Southern sides—and doing it consistently.
Rather than trying to become a nationwide brand, Chicken Express concentrated on dominating smaller cities and suburban communities across Texas and neighboring states. That disciplined strategy allowed the company to build loyal customers without taking on the enormous costs of rapid national expansion.
Today, with more than 200 restaurants, Chicken Express remains one of the most recognizable regional chicken chains in the South.

From Benbrook to a Regional Favorite
Chicken Express was founded in 1988 by Richard and Nancy Stuart in Benbrook, Texas. Before launching their own brand, the couple had spent nearly a decade operating another chicken franchise, giving them valuable experience in restaurant operations before striking out on their own.
One of the company’s earliest competitive advantages was delivery. Long before third-party delivery apps became common, Chicken Express advertised, “Our Chicken Can’t Fly, So We Deliver,” making it one of the first regional fast-food chicken chains to emphasize home delivery. As customer preferences evolved during the 1990s, the company expanded into drive-thru, dine-in, and catering while maintaining its focus on fresh, never-frozen chicken.
The menu also expanded beyond fried chicken to include Express Tenders, fried catfish, liver, gizzards, corn nuggets, fried okra, mashed potatoes, rolls, and the chain’s famous gallon-sized sweet tea. While many competitors narrowed their menus, Chicken Express leaned into Southern comfort food and became known for generous portions and family meals.
Today, Chicken Express operates throughout Texas, Oklahoma, Arkansas, and Louisiana while remaining headquartered in Burleson, Texas.
